Zucchini Cheese Quiche


I am back! Now I am home again and have acces to my (well my parents) glorious kitchen, it is about time to make some nice recipies that werent’t possible in my van on the campsite. Today the recipe for this beautiful, light vegetarian quiche. Very easy to make and delicious!

Ingredients (1 quiche for ca. 4 persons):

  • 180 gram flour
  • 2 tablespoons (caster) sugar
  • pinch of salt
  • 110 gram cold butter
  • 1/4 glass of water

 

  • 1 big zucchini
  • 4 eggs
  • 160 ml cream (or 80 cream and 80 milk)
  • 50 gram grated cheese
  • Spring onion
  • Peper, salt

Prepare the pie crust according THIS EASY BASIC RECIPE.

After baking the crust, turn down the oven to 160°C.

Meanwhile the crust bakes, prepare the filling. Slice up the zucchini and bake in oil with peper and salt. Love garlic? Go for it! Why not. After baking, leave them on a paper towel to drain.

Mix the cream, eggs, cheese and add peper and salt. I also like to add some of the spring onion into mixture. Pour the mixture in the pie crust and add zucchini on top.

Bake for 30 minutes or until the filling is set.

Finish with some fresh spring onion and serve with a nice green salad.
